3-Ingredient Fruit ’n’ Nut Energy Balls

A simple, make-ahead alternative to a choccy bar.

Makes: 10–12 balls
Keeps: Up to a week in the fridge, or freeze for later

INGREDIENTS

  • 125g walnuts
  • 125g dried apricots, chopped
  • 125g dates

METHOD

1) Soften the dates
Soak the dates in warm water for 10 minutes to soften.

2) Break down the nuts
While the dates soak, blitz the walnuts in a food processor or small blender until finely chopped.

3) Bring it together
Drain the dates, squeezing out any excess water. Add them to a bowl with the chopped walnuts and apricots.

4) Shape
Use your hands to mash everything together into a rough dough, then roll into golf-ball-sized balls.

5) Chill
Store in the fridge to firm up, or freeze to keep on hand for later.
